Soak shimikonnyaku in hot water for half an hour before rinsing thoroughly with either cold water or hot water. Then gently squeeze the shimi-kon to extract the excess water to prepare it for the next stage of cooking. It’s highly absorbent.
Shimi-kon is incredibly mild, so it can be flavored with anything you like.
After re-hydrating, shimi-kon can be served fresh, as tempura, sautéed, deep fried, or made into a veggie-burger or other meat substitute. The possibilities are endless!
